WHere is an easy take on a beverage found on a new menu. Designed as a batch pre-mixed that's loaded full of essence associated with holiday season, rendering it ideal for a festive gathering. Any leftover syrup to use in breakfast cocktails, desserts, or to mix additional servings of bikinis.
The Bikini Cocktail
Serves 10 people
To make the Citrus Syrup (makes 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g caster sugar
For the Premix (makes 850ml, enough for 10)
400ml decent vodka
100ml dry gin
150ml peach schnapps
200ml citrus syrup (as made above)
Fresh cranberries, for garnish
Mandarin essential oil, for finishing
Instructions
To prepare the Cordial: Place all the components in a pot, bring to a simmer, stirring to dissolve. Then, take off the stove and let it to cool entirely. Pour to a sealable bottle, close it and refrigerate it in the fridge, it can be stored for around one month.
To make Cocktail Base: Mix all the liquid ingredients in a big jug, allow it to infuse for 60 minutes, then filter it best through cheesecloth, so it's completely strained.
To serve: Measure 85ml of the premix to a stirring glass containing ice, gently stirring lightly for a minute to chill. Strain to a cold coupe glass or equivalent, top with some cranberries and finish by giving it a brief mist of the essential oil over the drink.
